Twelve to thirty people behind their own door, off the main dining floor, with a server who stays with the room all night.

The room

Built for one table, not five small ones.

We took the old storeroom at the back, put in one long table and left it at that. Everyone can hear each other, nobody is stuck at a corner, and the door closes when you want it to.

Numbers below are placeholders. Set your own minimums and notice period, then tell people once and stick to it.
